    Step1

    Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper. Separate egg. Put egg yolk in medium bowl and beat a few times, it will be used in the next step. Put the egg white in a small bowl with a teaspoon of water, beat and set aside (this is your egg wash).

    Step2

    Add cream cheese, sugar, vanilla and lemon juice to the medium bowl with the egg yolk. With a hand mixer blend on medium high until smooth. This amount of cream cheese filling is enough for all eight pastries.

    Step3

    Lay out the two puff pastry sheets, one on each baking sheet. Cut each pastry into 4 even squares. Fold pastry corners and then pastry sides into an octagon type shape. Spoon about two tablespoons of cream cheese into the centers of the 8 pastries. Do not spread cream cheese. Brush the pastries with the egg wash mixture.

    Step4

    Bake for 18-20 minutes until golden brown. In the photo there is one pastry with prosciutto and cheddar cheese, Smucker's cherry jam, cream cheese filling and Lemon Curd🍋. I wanted to show the different combinations you can do, both savory and sweet.

    Step5

    Allow to cool for 5 minutes then serve. Enjoy!
